Traditional vinification, with a vatting period of around ten days, during which the aim is to extract the grapes gently. Extraction is carried out by gentle pumping over to encourage infusion.
This strange bird has very pretty plumage in a crimson red with hints of violet. At first, the nose is
shy with a hint of zan. Then it quickly gains in confidence, revealing aromas of paprika, dried
tomato, blackberry and raspberry. The palate is already broad, with tight tannins on the finish that tighten and invigorate the whole.
